Marinate prawns for a perfect stir-fry success!
Ingredients:
  • 750g medium green prawns, peeled (tails intact), deveined
  • 36.40 gm peanut oil
  • 1 red onion, cut into wedges
  • 1 carrot, peeled, cut into thick matchsticks
  • 1 green capsicum, cut into 3cm pieces
  • 200g snow peas, trimmed, halved diagonally
  • Cooked hokkien noodles, to serve
  • 89.38 gm honey
  • 2cm piece fresh ginger, cut into short matchsticks
  • 42.00 gm lemon juice
Instructions:
  • Mix the marinade ingredients in a pitcher.
  • In a glass or ceramic bowl, combine prawns with the marinade. Mix well to ensure the prawns are evenly coated. Cover and refrigerate for 15 minutes. Remove prawns from the marinade, and set the marinade aside for later use.
  • In a hot wok, sizzle prawns in batches with half of the oil until they turn pink, about 2 minutes. Transfer to a bowl.
  • In a hot wok, add the remaining oil. Throw in onion, carrot, and capsicum, and stir-fry for 2 to 3 minutes until just tender. Toss in snow peas and stir-fry for an additional minute. Put the prawns back into the wok, pour in the reserved marinade, and stir-fry for 2 minutes until the sauce boils and prawns are fully cooked. Serve with noodles.
