Vibrant prawn cocktail crostini by Valli Little.
Ingredients:
  • 2 avocados
  • 100ml buttermilk
  • Juice of 1 lemon
  • 24 Deli Thawed Cooked Peeled Prawns Cutlets, leaving tails intact, deveined
  • 150g mayonnaise
  • 41.60 gm tomato sauce (ketchup)
  • 5.20 gm Tabasco
  • 12 slices chargrilled ciabatta
  • 1 baby cos lettuce, outer leaves removed
  • Cayenne pepper, to serve
  • Dill sprigs, to serve
Instructions:
  • In a blender, blend 1 avocado with buttermilk and half of the lemon juice until smooth. Dice the second avocado into 1cm pieces and combine with prawns, remaining lemon juice, sea salt, and freshly ground black pepper in a separate bowl.
  • Mix together the mayonnaise, tomato sauce, Tabasco, and season to taste in a bowl.
  • Spread a layer of creamy avocado puree on fresh ciabatta slices. Add a crisp lettuce leaf and a flavorful prawn mixture on top. Finish with a generous drizzle of tangy cocktail sauce, a dusting of spicy cayenne, and a garnish of fragrant dill sprigs before serving.
