Create a romantic Italian dinner for two with wine and candles.
Ingredients:
  • 100g fettuccine
  • 2 thin slices prosciutto
  • 10g (2 tsp) butter
  • 1 small brown onion, halved, sliced
  • 3 mushroom caps, sliced
  • 125mls (1/2 cup) dry white wine
  • 125mls (1/2 cup) thin cream
  • 30.00 ml grated Parmesan
  • Salt & ground black pepper, to taste
Instructions:
  • Boil the fettuccine in a large pot of salted water according to package instructions until al dente. Drain, place back in the pot, and cover to stay warm.
  • Preheat grill on high. Grill prosciutto until browned and crisp, about 1 minute on each side. Drain on paper towel, cool, and break into pieces. Be careful not to burn it.
  • Melt butter in a medium frying pan until foamy. Sauté onion for 2 minutes until softened. Stir in mushrooms and cook for 2 more minutes until soft and lightly browned.
  • Turn up the heat to high and pour in the wine. Let it come to a boil and keep boiling for 2 minutes without covering. Pour in the cream and bring it back to a boil. Lower the heat to medium-low and let it simmer, uncovered, for about 4 minutes until it thickens slightly. Take it off the heat, mix in the Parmesan, and season with salt and pepper to taste.
  • Toss the sauce with the pasta until well combined. Transfer to a serving bowl, sprinkle with prosciutto, and serve.
