Elevate classic mac and cheese with tender flaked salmon for a creamy and delectable twist.
Ingredients:
  • nonstick cooking spray
  • 9 ounces salmon fillets
  • 1 teaspoon salt, or to taste
  • 1 (16 ounce) package elbow macaroni
  • 0.5 cup butter
  • 0.5 cup all-purpose flour
  • 2.5 cups 2% milk
  • 1.5 cups half-and-half
  • 0.75 pound shredded smoked Gouda cheese
  • 0.5 pound shredded smoked Cheddar cheese
  • 0.5 teaspoon garlic powder
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously spray a 9x13-inch baking dish with nonstick cooking spray, then set it aside.
  • Lay the salmon in a 2-quart baking dish and season with salt and pepper.
  • Bake salmon in the oven for 10 to 11 minutes until partially cooked. Keep oven on for further cooking.
  • While the salmon is cooking, boil a large pot of salted water. Add the macaroni noodles and cook until al dente, for 10 to 11 minutes. Drain and set aside.
  • As noodles cook, melt butter in a large pan over medium-high heat, stirring occasionally. If butter begins to brown, lower the heat. Aim for melted butter without browning.
  • Stir flour into the melted butter until smooth and creamy, ensuring there are no lumps. Cook the mixture for 1 minute, continuously whisking and adjusting the heat as necessary.
  • Whisk in half of the milk and half-and-half into the roux until smooth, then gradually add the rest while whisking. Increase heat until bubbling and thickened, then lower heat. Stir in cheeses, reserving 1/2 cup for topping. Whisk until creamy, then season with garlic powder, salt, and pepper.
  • Combine the drained macaroni noodles with the cheese sauce, then gently fold in the par-cooked salmon chunks until the noodles are well coated. Transfer the mixture to the baking dish and top with reserved grated cheese.
  • Bake until golden and bubbly in the preheated oven for 25-30 minutes.
