Creamy sausage orzo: one-pot meal with protein, veggies, and delicious sauce.
Ingredients:
  • 2 to 3 links Italian sausage
  • 1 red bell pepper, diced
  • 4 garlic cloves, minced
  • 1 (14.5 ounce) can diced tomatoes, divided
  • .75 teaspoon Italian seasoning
  • 1 cup orzo
  • 1.25 cup chicken broth
  • .25 cup half and half
  • 1 cup spinach, or desired amount
  • .5 cup freshly shredded Parmesan cheese
  • Pinch crushed red pepper
Instructions:
  • Heat oil in a heavy skillet over medium-high heat. Cook sausage links on all four sides until browned, about 5 minutes. Push sausage to the side and add onions and bell pepper. Cook until softened, about 4 to 5 minutes. Stir in garlic and cook until fragrant, about 45 seconds.
  • In a skillet, add 1/4 of the tomatoes with the liquid. Blend the remaining tomatoes until smooth, then pour into the skillet. Mix in Italian seasoning, orzo, and chicken broth until combined.
  • Cover the skillet and simmer on medium heat for 10 minutes. Remove sausages and slice into coin-sized pieces.
  • Combine half and half and spinach, letting the spinach wilt for about 2 minutes. Stir in sliced sausage, Parmesan cheese, and crushed red pepper. Adjust seasonings as needed before serving hot.
