Creamy sausage and rice soup with herbs - a cozy winter warmer.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons chopped onion
  • 4 (3.5 ounce) links Italian sausage, sliced
  • 8 cups chicken stock
  • 1 teaspoon dried oregano
  • 1 tablespoon dried basil
  • 0.25 cup chopped fresh parsley
  • 2 cups uncooked white rice
  • 0.5 cup heavy cream
Instructions:
  • In a large pot over medium heat, warm up the oil before adding garlic and onion. Stir and cook for about 3 minutes until tender. Then, add the sausage and brown evenly on all sides for about 5 minutes.
  • Pour in rich chicken stock, sprinkle in fragrant oregano, basil, and parsley. Let the savory mixture come to a lively boil, then lower the heat and gently simmer for 1 hour.
  • Simmer the rice for an additional 30 minutes.
  • Stir in the cream until well combined. Allow the soup to rest off the heat for 5 minutes before serving.
