Italian-style meatloaf

Simplify cooking with freezer-friendly Italian meatloaf.
Ingredients:
  • 600g pork and veal mince
  • 1 small brown onion, finely chopped
  • 1 small red capsicum, finely chopped
  • 1 small tomato, deseeded, finely chopped
  • 250.00 ml fresh breadcrumbs
  • 44.40 gm tomato paste
  • 1 tsp dried oregano
  • 1 egg, lightly beaten
  • Steamed corn cobs, to serve
  • Green beans, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Lightly grease a 7cm-deep, 9cm x 22cm loaf pan and line it with baking paper, leaving a 2cm overhang on the long sides.
  • Mix together the mince, onion, garlic, capsicum, tomato, breadcrumbs, tomato paste, oregano, and egg in a bowl. Press the mixture into the prepared pan.
  • Bake for 50 minutes, or until the top is firm to the touch. Let it stand in the pan for 10 minutes, then transfer to a board, slice, and serve with corn and beans.
