Creamy sausage pasta ready in 35 minutes for busy weeknights.
Ingredients:
  • 375g dried curl pasta
  • 300g broccoli, cut into florets
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, halved, thinly sliced
  • 20.00 ml fresh thyme leaves
  • 500g packet Italian style beef and pork sausages
  • 62.50 gm dry white wine
  • 300ml Cooking Cream
  • 60g baby spinach
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line a baking tray with baking paper. Divide 4 tablespoons of parmesan into 4 mounds on the tray and flatten each into a 6cm round. Bake for 5 minutes until golden, then allow to cool.
  • Cook pasta in a large saucepan of boiling water according to packet directions. Add broccoli during the last 3 minutes of cooking time. Reserve 1/4 cup cooking liquid before draining.
  • In a large, deep frying pan, heat oil over medium-high heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and thyme and cook until fragrant, for about 1 minute. Squeeze mince from sausages into the pan and cook for 5 to 6 minutes, breaking it up with a wooden spoon until browned and almost cooked through. Pour in wine and simmer until reduced by half, for about 1 to 2 minutes. Stir in cream, bring to a boil, then reduce heat to low and simmer until slightly thickened, for 3 to 4 minutes.
  • Combine the spinach, pasta mixture, and reserved cooking liquid in a pan. Season to taste. Toss over heat for 3 to 4 minutes or until warmed. Portion into serving bowls and sprinkle with crumbled parmesan. Serve hot.
