Cozy up with creamy, hearty Potato Gnocchi Soup featuring Italian sausage, spinach, and tomatoes.
Ingredients:
  • 0.5 pound bulk Italian sausage
  • 0.25 cup butter
  • 0.5 cup chopped yellow onion
  • 1 teaspoon minced garlic
  • 0.25 cup all-purpose flour
  • 3.5 cups Swanson® Unsalted Chicken Broth
  • 1 cup heavy cream
  • 1 (16 ounce) package potato gnocchi
  • 0.5 cup chopped spinach
  • 0.5 cup canned diced tomatoes
  • salt and pepper to taste
  • 0.25 cup grated Parmesan cheese (or more to taste), for garnish
Instructions:
  • 1. Preheat a skillet over medium-high heat. Cook ground sausage, breaking it up into small pieces, until browned, approximately 7 minutes. Place in a bowl, then discard grease and wipe the skillet clean with a paper towel.
  • Melt butter in a skillet over medium heat. Sauté onion until translucent, about 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute. Whisk in flour until combined with butter, for about 1 minute. Gradually pour in chicken broth and cream, whisk until it boils, then reduce heat to low. Simmer until thickened, about 10 minutes, remember to whisk occasionally.
  • Add the sausage back to the skillet and toss in the gnocchi, spinach, and tomatoes. Cook over medium heat until the gnocchi is heated through in 2 to 3 minutes. Season with salt and pepper, then sprinkle with Parmesan cheese to garnish.
