Italian Sausage and Gnocchi Skillet

One-skillet comfort meal with sausage, gnocchi, tomatoes, and spinach. Easy and satisfying.
Ingredients:
  • 1 tablespoon avocado oil
  • 0.5 cup finely diced onion
  • 2 large cloves garlic, finely diced
  • 1 pound mild Italian pork sausage, casing removed
  • 1 (16 ounce) package dry mini potato gnocchi
  • 2.5 cups no-salt-added diced tomatoes, undrained
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon ground oregano
  • 0.25 teaspoon ground black pepper
  • 5 ounces baby spinach
  • 1 pinch freshly grated nutmeg
  • 1 cup shredded fresh mozzarella cheese
  • 0.5 cup freshly shredded Parmesan cheese
Instructions:
  • In a large nonstick skillet over medium-high heat, warm the avocado oil. Saute the onion until softened, for about 3 to 4 minutes. Add the garlic and cook until fragrant, around 30 seconds. Add the sausage and cook, breaking it up as it browns, for 5 to 7 minutes.
  • Remove excess oil and leave the meat mixture in the skillet. Incorporate gnocchi, breaking up any clumps. Add tomatoes, salt, basil, oregano, and pepper. Cover and let simmer for 5 minutes.
  • Add spinach and nutmeg to the pot and let it simmer until the spinach wilts, which should take about 3 to 5 minutes. Sprinkle mozzarella and Parmesan cheeses on top, cover the pot, and simmer until the cheese melts, which will take 2 to 3 minutes. Serve hot.
