Creamy garlic sausage orzo with a touch of smokiness, a delightful twist on Alfredo pasta, sure to impress as a main dish.
Ingredients:
  • I cup orzo pasta
  • 1/2 pound smoked sausage, sliced into thin rounds
  • 1/4 white onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup heavy whipping cream
  • 1 1/2 cups dry white wine
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 3 tablespoons butter
  • 3 tablespoons Olive Oil
  • 1/4 cup chopped fresh parsley
  • Salt and Pepper to taste
Instructions:
  • 1. Boil salted water in a large pot. Cook orzo in the bubbling water, stirring occasionally until al dente, for about 8 to 11 minutes.
  • Heat a skillet over medium heat and brown the sausage on all sides for approximately 5 minutes. Place the cooked sausage on a paper towel-lined plate to drain, then use a paper towel to wipe out the excess grease from the pan.
  • Combine butter and olive oil in skillet over medium-high heat. Sauté onions until soft, about 3 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Simmer wine in skillet until reduced by half. Stir in cream and 1/4 cup pasta water. Cook for 1 minute, then mix in Parmesan cheese. Season with salt and pepper to taste.
  • After draining the pasta, combine it with the sauce. Give it a good stir and then mix in the sausage. For serving, garnish with parsley and sprinkle additional Parmesan cheese to taste.
