Decadent scallop chowder with white wine, onions, and mushrooms. Choose ocean or bay scallops for an exquisite soup.
Ingredients:
  • 0.5 cup dry white wine
  • 1 pound scallops, rinsed and drained
  • 2 tablespoons butter
  • 1 bunch green onion, minced
  • 4 ounces fresh mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 teaspoon salt
  • 1 pinch ground white pepper
  • 0.5 cup shredded Swiss cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Rinse scallops and pat dry.
  • In a small stock pot, melt butter over gentle heat. Cook onions and mushrooms until they are tender.
  • Combine the flour and milk in the pot, stirring over medium heat until thickened and bubbly. Incorporate the wine, scallops, salt, and pepper, continuing to cook until thickened. Serve with a generous topping of Swiss cheese and parsley.
