Delicious seafood chowder with sweet potato, corn, bell peppers, scallops, and tilapia in a creamy milk-based broth.
Ingredients:
  • 2 tablespoons butter
  • 0.5 onion, diced
  • 3 miniature multi-colored sweet peppers, diced
  • 1 teaspoon herbes de Provence
  • 0.125 teaspoon cayenne pepper
  • 1 sweet potato, peeled and cut into 1/2-inch cubes
  • 1 ear corn, kernels cut from the cob
  • 1 cup chicken broth
  • 2 cups milk
  • 0.5 pound scallops
  • 0.5 pound tilapia fillets, cut into chunks
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a large pot over medium heat, melt butter until sizzling. Stir in onion, peppers, garlic, herbes de Provence, and cayenne pepper. Cook until onion turns soft and translucent, around 5 minutes. Add sweet potato and corn, continue to cook for 2 more minutes.
  • Combine the chicken broth and milk in a pot and bring to a high boil. Reduce heat to low, cover, and simmer for 15 minutes.
  • Use an immersion blender to partially blend the chowder. Add scallops and tilapia, then simmer on low until the seafood is cooked through, about 7 to 10 minutes. Taste, and season to perfection.
