Transform pantry tuna into delicious weeknight patties.
Ingredients:
  • 500g orange sweet potato, peeled
  • olive oil cooking spray
  • 4 green onions, sliced
  • 2 x 180g cans tuna in springwater, drained, flaked
  • 1 egg, lightly beaten
  • 250.00 ml fresh wholemeal breadcrumbs
  • 40.00 ml flat-leaf parsley leaves, chopped
  • 40.00 ml plain flour
  • 9.00 gm sesame seeds
  • 2 bunches broccolini, rinsed, trimmed
  • lemon wedges, to serve
Instructions:
  • Cut sweet potato into delightful 5cm pieces. Give them a quick wash and arrange them, still slightly wet, on a microwave-safe plate. Cover and microwave on HIGH (100%) for 3 to 4 minutes until they are tender. Drain them well, then move them to a spacious bowl. Roughly mash them using a fork and let them cool a bit.
  • Preheat oven to 180°C. Lightly oil a small non-stick frying pan and heat over medium heat. Sauté onions and garlic for 2 minutes until soft. Add to sweet potato.
  • Mix in the tuna, egg, breadcrumbs, and parsley with the sweet potato mixture until fully incorporated. Form the mixture into 12 uniform portions and shape them into 1.5cm-thick patties.
  • Mix flour and sesame seeds on a plate. Coat patties with flour mixture, removing any excess. Heat a large non-stick frying pan over medium heat. Spray patties with oil on both sides. Cook in batches for 4 to 5 minutes per side until golden and cooked through. Keep warm in the oven.
  • Place the broccolini in a microwave-safe plastic bag, twist the top to seal it, and microwave on HIGH for 1 1/2 to 2 minutes until just tender. Drain before serving with the patties and lemon wedges. Enjoy!
