Try our gourmet scalloped potatoes with bacon, chives, and Gruyere - pure homemade perfection.
Ingredients:
  • 3 tablespoons butter
  • 2 pounds (about 4 medium sized) Russet potatoes, peeled, sliced 1/8-inch thick
  • 1 large yellow or white onion, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives (optional)
  • 2 thick slices bacon, cooked and chopped
  • 2 1/2 cups grated Swiss or Gruyere cheese (about 8 ounces)
  • 1/2 cup grated Parmesan cheese (about 2 ounces)
  • 2 1/2 cups to 3 cups of half-and-half (half milk, half cream)
  • Salt and pepper
Instructions:
  • Preheat your oven to 350°F. Generously coat a large casserole dish with a luxurious 1 1/2 tablespoons of butter.
  • Assemble the casserole: Start by arranging one-third of the potato slices at the bottom of the casserole dish. Season with salt and pepper. Next, add a layer of half of the sliced onions, 1/2 cup of Swiss cheese, half of the bacon, and half of the parsley and chives. Sprinkle with a touch of Parmesan. Repeat with another third of the potato slices, more seasoning, the remaining onions, Swiss cheese, bacon, parsley, and chives. Add more Parmesan. Finish by layering the rest of the potato slices, pouring in the half and half, and dotting the top with the remaining 1 1/2 tablespoons of butter.
  • Bake the covered casserole at 350°F for one hour. Then, uncover, sprinkle the remaining Swiss and Parmesan cheese, and continue baking until melted and bubbly.
  • Continue baking for an extra 30 to 40 minutes until the potatoes are tender, yet firm, and the liquid is mostly absorbed.
