Creamy Shrimp Casserole

Decadent shrimp, mushroom, and green pea bake with creamy sauce over egg noodles, topped with buttery cracker crumbs.
Ingredients:
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon salt
  • 3 cups wide egg noodles
  • 2 tablespoons butter
  • 1.5 tablespoons all-purpose flour
  • 2.5 cups milk
  • 0.5 cup heavy cream
  • 1 cup frozen green peas, thawed
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 1 cup crushed buttery round crackers
  • 1 tablespoon cold butter, thinly sliced
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 3-quart casserole dish.
  • Fill a large pot with water and bring to a boil. Add the shrimp, simmer until opaque and pink, approximately 3 minutes. Remove shrimp. Bring the water back to a boil, add noodles, and cook until tender, around 8 minutes. Drain in a colander.
  • In a saucepan over medium heat, melt 2 tablespoons of butter. Stir in the flour to create a paste. Remove from heat and slowly whisk in milk and cream until smooth. Season with salt and black pepper. Return to heat, simmer, and whisk until thickened, about 5 minutes.
  • Spread noodles in the casserole dish, layer with peas, mushrooms, and cooked shrimp. Cover with sauce, sprinkle with crushed cracker crumbs, and top with thin slices of butter.
  • Simply bake until the cracker topping is crisp and golden brown, about 1 hour in the preheated oven.
