Louisiana Shrimp Casserole

Creamy mushroom shrimp with cheesy rice.
Ingredients:
  • 1.5 cups uncooked instant rice
  • 1.5 cups water
  • 1 teaspoon vegetable oil
  • 1 pound small shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 (4 ounce) can sliced mushrooms, drained
  • 1 (10.75 ounce) can condensed cream of shrimp soup
  • 1 (8 ounce) container sour cream
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • Preheat the broiler in the oven and then grease an 8x8 inch baking dish.
  • In a pot, combine rice and water and bring to a boil. Reduce heat, cover, and simmer for 10 minutes. Transfer rice to the prepared baking dish.
  • 1. Heat oil in a large skillet over medium heat. Add shrimp and cook for 3 minutes until opaque; set aside. Next, melt butter in the same skillet. Saute mushrooms for 2 minutes. Add soup and sour cream and heat through, avoiding boiling. Return shrimp to skillet and cook until heated. Finally, spoon the skillet mixture over rice in a baking dish and sprinkle with cheese before serving.
  • Place in the preheated oven and broil for about 5 minutes, or until it's bubbly and golden brown.
