Louisiana-Style Shrimp Casserole

Elevate dinner with zesty shrimp and flaky biscuit topping.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 clove garlic, finely chopped
  • 2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
  • 1/4 cup finely chopped celery
  • 2 tablespoons Original Bisquick™ mix
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 12 oz cooked deveined peeled medium shrimp, thawed if frozen, tail shells removed
  • 3/4 cup Original Bisquick™ mix
  • 1/4 cup milk
  • 1 egg
Instructions:
  • Preheat the oven to 400°F. In a 10-inch skillet over medium-high heat, melt butter. Add garlic, stir-fry vegetables, and celery, cook for about 5 minutes, stirring frequently, until vegetables are crisp-tender.
  • Blend 2 tablespoons of Bisquick mix into the vegetable mixture until combined. Add tomatoes, salt, pepper sauce, and shrimp. Cook on medium-low heat for about 7 minutes, stirring occasionally, until thickened and bubbling. Transfer the shrimp mixture into an ungreased 8-inch square (2-quart) glass baking dish.
  • Combine 3/4 cup Bisquick mix, milk, and egg in a small bowl and mix until smooth. Pour the mixture over the shrimp.
  • Bake until the crust turns a beautiful golden brown, usually about 20 to 30 minutes.
