Decadent shrimp scampi in a velvety sauce with shallots, garlic, white wine, and a touch of lemon.
Ingredients:
  • 0.25 cup flour
  • 24 large shrimp in shell (21 to 25 per lb), peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped shallot
  • 1 large clove garlic, pressed
  • 1 cup chicken broth, divided
  • 0.5 cup Chardonnay wine
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 0.5 cup butter
  • 0.25 cup grated Romano cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Coat shrimp in seasoned flour, shaking off any extra.
  • In a large skillet over medium heat, heat oil. Cook shrimp until pink, approximately 2 minutes each side. Set shrimp aside. Leave 1 tablespoon of oil in the skillet. Add shallots and garlic; sauté until soft, about 2 minutes. Pour in chicken broth, wine, and lemon juice. Simmer until reduced to about 3/4 cup, around 5 minutes.
  • Add the remaining 1/2 cup of chicken broth and cream to the mixture, simmer for around 10 minutes to reduce and thicken the sauce slightly. Then, incorporate the butter and stir until melted.
  • Add the shrimp back into the skillet and let it simmer until heated through, approximately 3 minutes. Prior to serving, sprinkle with Romano cheese and fresh parsley.
