Upgrade your slow-cooker side with rich Marsala wine and flavorful chicken broth for a luxurious twist.
Ingredients:
  • 1 1/2 lb cremini or button mushrooms, cleaned and trimmed
  • 1 small shallot, diced (about 1/3 cup)
  • 2 cloves garlic, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup sweet Marsala
  • 1/4 cup Progresso™ chicken broth (from 32-oz carton)
  • Dash salt and pepper
  • 1/2 cup heavy whipping cream
  • 1 teaspoon cornstarch
  • Grated Parmesan cheese and additional parsley, if desired
Instructions:
  • Gently butter slow cooker. Layer mushrooms on the bottom, allowing some overlap; they will shrink while cooking. Sprinkle with shallot, garlic, and parsley.
  • Combine Marsala wine and chicken broth in a small bowl, then pour the mixture over the mushrooms. Season with salt and pepper.
  • Cook covered on low heat for 8 hours. In a small bowl, combine heavy cream and cornstarch until smooth. Pour mixture into slow cooker and stir gently. Taste and add salt as needed before serving.
  • Garnish with a generous sprinkle of Parmesan and fresh parsley. Serve elegantly with toothpicks, bread, or over pasta to suit your preference.
