Creamy slow-cooked ham and potato soup with rich milk and cream cheese.
Ingredients:
  • 3 cups peeled and cubed potatoes
  • 0.5 cup chopped celery
  • 0.5 cup chopped onion
  • 1 cup chicken stock
  • 1 teaspoon dried parsley
  • 0.5 teaspoon salt
  • 1 pinch ground black pepper
  • 2 teaspoons all-purpose flour
  • 1.5 cups milk
  • 0.5 (8 ounce) package cream cheese
  • 1 cup chopped ham
Instructions:
  • Add potatoes, celery, onion, chicken stock, and parsley to the slow cooker. Season generously with salt and black pepper. Cook on High and cover until vegetables are tender, about 2 hours.
  • Combine flour and milk in a bowl, whisking until smooth. Transfer mixture into slow cooker and stir until it thickens. Cook on High for an additional 2 hours.
  • Achieve your ideal potato consistency in the slow cooker, then blend in cream cheese and cooked ham. Let the soup simmer until the cream cheese is fully melted, the soup is rich and creamy, and the ham is heated through, which should take about 30 minutes to 1 hour.
