Creamy slow cooker ham and potato soup - easy, comforting, and perfect for using up holiday leftovers.
Ingredients:
  • 1 (28 ounce) package frozen hash brown potatoes, thawed
  • 2 cups diced cooked ham
  • 0.5 cup diced onion
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 0.25 teaspoon pepper
  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) package shredded Cheddar cheese
  • 2 tablespoons chopped green onions, or to taste
Instructions:
  • In a slow cooker, mix together hash browns, ham, onion, celery, chicken broth, salt, pepper, and garlic powder until well combined. Cover with the lid.
  • Simmer on low heat for 4 to 5 hours until the celery is tender.
  • Combine cream cheese and Cheddar cheese, stirring until melted. Cover and cook on Low for another 30 minutes, stirring occasionally. Serve topped with chopped green onions for a delightful garnish.
