Slow cooker cheesy bacon potatoes recipe

Effortlessly cook tender potatoes in a slow cooker, then top with cheesy bacon for an irresistible upgrade.
Ingredients:
  • 750g baby coliban (chat) potatoes, halved
  • 2 garlic cloves, crushed
  • 27.30 gm olive oil
  • 3 rashers shortcut bacon, cut into thin strips
  • 40g (1/2 cup) grated tasty cheese
  • Fresh chives, to serve
Instructions:
  • Place a sheet of baking paper in the slow cooker. Add potato, garlic, and 1 tbsp of oil. Season with salt, toss to coat, then cover and cook on HIGH for 4 hours until tender.
  • In a frying pan over medium heat, sizzle the bacon in the remaining oil, stirring occasionally, until crisp, about 4 minutes.
  • Remove the slow cooker lid, gently patting dry any moisture underneath. Spread the bacon and cheese over the potato. Place a folded tea towel on top of the slow cooker, then cover and cook for an additional 20 minutes, or until the cheese is beautifully melted.
  • Garnish the potato with freshly chopped chives before serving.
