Delicious slow cooker potato soup loaded with russet potatoes, bacon, Cheddar cheese, sour cream, and scallions for a cozy and satisfying meal.
Ingredients:
  • 4 pounds russet potatoes, peeled and chopped
  • 1 (32 ounce) carton low-sodium chicken stock
  • 1 yellow onion, diced
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 1 (16 ounce) package thick cut bacon, cut into 1/2-inch pieces
  • 1 cup shredded Cheddar cheese, divided
  • 2 cups heavy cream
  • 4 tablespoons butter
  • 0.25 cup all-purpose flour
  • 0.25 cup sour cream
  • 2 tablespoons chopped scallions, or to taste
Instructions:
  • In a slow cooker, mix together potatoes, chicken stock, onion, salt, and pepper. Cook on High for approximately 4 hours until potatoes are tender.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, for about 10 minutes. Then drain the bacon on paper towels and remove most of the grease from the skillet.
  • Smoothly puree potatoes in the slow cooker using an immersion blender. Stir in 1/2 cup of Cheddar cheese and half of the cooked bacon. Set the temperature to Low and let it cook for 1 to 2 hours.
  • In a skillet over medium-low heat, melt butter. Whisk in flour until a paste forms and turns light golden brown, approximately 5 minutes. Add heavy cream and sour cream, whisk until thickened. Transfer to the slow cooker and cook on Low for an additional hour.
  • Serve the delicious soup in bowls, then top it off with the extra bacon, Cheddar cheese, sour cream, and scallions for an added burst of flavor and presentation.
