Slow-Cooker Beef and Scalloped Potatoes Casserole

Slow cooker scalloped potato and ground beef casserole, loaded with delicious toppings for a comforting dinner that will please everyone.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 cup diced yellow onions
  • 1 package (8 oz) cream cheese, cubed
  • 3 1/2 cups water
  • 2 boxes (4.7 oz each) Betty Crocker™ scalloped potatoes
  • 1 cup shredded sharp Cheddar cheese (4 oz)
  • 1/2 cup chopped cooked bacon (6 slices)
  • 2 tablespoons thinly sliced green onions
  • Sour cream, if desired
Instructions:
  • Grease a 4 1/2- to 5-quart slow cooker with cooking spray.
  • Cook the beef and onions in a 10-inch nonstick skillet over medium-high heat for 7 to 9 minutes until browned. Drain the mixture and return it to the skillet over low heat. Stir in the cream cheese and cook for 2 to 3 minutes until melted, stirring frequently.
  • Combine water and sauce mixes from scalloped potatoes boxes in a slow cooker. Add potatoes from scalloped potatoes boxes and mix well. Spread beef mixture over the potatoes.
  • Cover and let simmer on low heat for 2 to 2 1/2 hours, or until the potatoes are tender and the liquid is absorbed.
  • Stir the mixture and sprinkle with Cheddar cheese. Cover and simmer on low heat for 3 to 5 minutes until the cheese is melted. Top with bacon and green onions, and serve with sour cream.
