Delicious slow-cooked beef and vegetables in a flavorful broth, a simple and satisfying meal.
Ingredients:
  • 1 (4 pound) beef chuck roast
  • 6 medium potatoes, peeled and halved
  • 6 carrots, peeled and halved
  • 0.5 large onion, cut into chunks
  • 1 (1.25 ounce) envelope dry onion soup mix
  • 0.25 cup cooking sherry
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Italian seasoning
  • 2 teaspoons beef bouillon
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried rosemary
  • 6 cups water to cover
  • 2 tablespoons butter
  • 2 tablespoons flour
Instructions:
  • In the slow cooker, layer chuck roast, potatoes, carrots, and onion. Sprinkle with onion soup mix, cooking sherry, Worcestershire sauce, Italian seasoning, beef bouillon, garlic powder, black pepper, salt, and rosemary. Pour water over to cover everything.
  • Slow cook until the meat and vegetables are tender and fully cooked, approximately 8 hours.
  • In a small saucepan over medium-high heat, melt butter. Whisk in flour until a smooth paste forms. Stir in 1 cup of slow cooker liquid until fully incorporated. Pour flour mixture into the slow cooker liquid, stirring continuously until thickened, approximately 20 minutes.
