Slow-Cooker Ginger-Orange Beef Pita Sandwiches

Savory slow-cooked beef and veggies in a cozy pita sandwich.
Ingredients:
  • 1 pound beef boneless round steak
  • 1 medium red onion, cut into eighths
  • 1 medium orange bell pepper, cut into 1-inch pieces (1 1/2 cups)
  • 1 medium jicama, peeled and cut into julienne strips (1 1/2 cups)
  • 1 tablespoon grated orange peel
  • 1/3 cup orange juice
  • 1 teaspoon finely chopped gingerroot
  • 1/2 teaspoon salt
  • 1 package (6 ounces) frozen snap pea pods, thawed
  • 3 pita breads (6 inches in diameter), cut in half to form pockets
  • Chutney, if desired
Instructions:
  • Prepare the beef by trimming excess fat. Slice the beef into thin 2-inch strips, then cut those strips into 1/8-inch slices.
  • Add the beef, onion, bell pepper, and jicama to the slow cooker. Combine the orange peel, orange juice, gingerroot, and salt, then pour over the beef and vegetables.
  • Slow cook covered on low heat for 4 to 6 hours until the beef is tender.
  • Add snap pea pods to the mixture and gently mix them in. Cover the pot and simmer on low heat for approximately 15 minutes, or until the pea pods reach a perfect crisp-tender texture.
  • Fill pita breads with the beef mixture and enjoy with Golden Fruit Chutney.
