Create a flavorful Asian-inspired ginger beef roast in your slow cooker. Serve with rice and sugar snap peas for a delicious one-dish meal.
Ingredients:
  • 3-pound beef boneless chuck roast
  • 1 teaspoon peppered seasoned salt
  • 3/4 cup classic-style stir-fry sauce
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 2 teaspoons grated gingerroot or 1 teaspoon ground ginger
  • 1 bag (1 pound) frozen stir-fry bell peppers and onions, thawed
Instructions:
  • Prepare your 12-inch nonstick skillet with a light coating of cooking spray. Keep the netting or ties on the beef roast. Season the beef with peppered seasoned salt. Sear the beef in the skillet over medium-high heat for 5 to 6 minutes, flipping it once, until both sides are nicely browned.
  • Prepare the slow cooker by spraying it with cooking spray. Arrange the beef inside the cooker, and if needed, cut it in half to ensure it fits. In a small bowl, combine stir-fry sauce, ketchup, vinegar, and gingerroot, then pour the mixture over the beef.
  • Cook covered on Low heat for 8 to 9 hours.
  • Place the beef on a platter and cover to keep warm. Add stir-fry vegetables to the mixture in the cooker. Increase the heat setting to High, cover, and cook for 15 to 20 minutes or until the peppers are tender. Remove any netting or strings from the beef and serve the pepper mixture with the beef.
