Slow-Cooker Pepper Steak

Slow-cooked beef infused with ginger and soy sauce for a flavorful meal.
Ingredients:
  • 1 1/2 lb boneless beef round steak
  • 2 medium onions, cut into 1/4-inch slices
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 2 medium green bell peppers, cut into 3/4-inch strips
  • 2 medium tomatoes, cut into eighths
  • 6 cups hot cooked rice
Instructions:
  • Trim the excess fat off the beef, then cut it into 6 serving pieces. In a 12-inch skillet sprayed with cooking spray, cook the beef over medium-high heat for about 8 minutes, turning once, until nicely browned.
  • Firstly, arrange the beef, onions, garlic, and gingerroot in a 3- to 4-quart slow cooker. Secondly, combine the broth and soy sauce in a small bowl, then pour the mixture over the beef.
  • Cover and simmer on low heat for 7 to 9 hours until the beef is tender.
  • Combine cornstarch and water in a small bowl, then add to beef mixture. Mix in bell peppers and increase heat to High. Cover and cook for 10 to 12 minutes until slightly thickened. Add tomatoes, cover, and cook for 3 more minutes until heated through. Serve over rice.
