Slow-Cooker Caramelized Onion Beef Stew

Caramelize sweet onions, slow cook with beef and veggies for a delicious stew.
Ingredients:
  • Reynolds™ Slow Cooker Liners
  • 2 tablespoons butter or margarine
  • 4 cups halved and thinly sliced sweet onions (about 1 1/2 onions)
  • 2 teaspoons sugar
  • 2 teaspoons chopped fresh thyme leaves
  • 1 1/2 lb beef stew meat
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1 package (.87 oz) onion gravy mix
  • 2 cups 1-inch pieces diagonally cut carrots
  • 1 cup 1-inch pieces diagonally cut parsnips
  • 1/2 cup frozen sweet peas
Instructions:
  • Carefully insert a Reynolds™ Slow Cooker Liner into a 5- to 6 1/2 -qt slow cooker, ensuring a secure fit against the bottom and sides of the bowl, then pull the top of the liner over the rim of the bowl.
  • In a 10-inch skillet, gently melt butter over medium-low heat. Cook onions and sugar in the butter for 30 to 35 minutes, stirring often, until the onions are beautifully deep golden brown and caramelized. Mix in thyme and stew meat, then transfer everything to the slow cooker.
  • Combine broth and gravy mix in a medium bowl, then pour over meat in the slow cooker. Add carrots and parsnips on top, cover, and cook on Low heat for 8 to 9 hours until beef and vegetables are tender.
  • Gently fold in the peas and simmer covered for an additional 10 to 15 minutes until heated through.
