Slow-Cooker Caramelized-Onion Pot Roast

Effortlessly achieve a delicious pot roast dinner with slow cooking. Just add sides for a complete meal ready when you are.
Ingredients:
  • 1 boneless beef chuck roast (4 lb)
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon salt
  • 6 medium onions, sliced
  • 1 1/2 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 3/4 cup regular or nonalcoholic beer
  • 2 tablespoons packed brown sugar
  • 3 tablespoons Dijon mustard
  • 2 tablespoons cider vinegar
Instructions:
  • Prepare the beef by trimming any excess fat. Heat oil in a skillet over medium-high heat and cook the beef for about 10 minutes, turning occasionally, until it is brown on all sides. Season with salt and pepper to taste.
  • Spread a layer of onions in the slow cooker, then nestle the beef on top of the onions.
  • Combine all the remaining ingredients together, then pour the mixture over the beef and onions. Cover and let it cook on low heat setting for 8 to 10 hours, or until the beef is tender.
  • Take out the beef and onions from the cooker using a slotted spoon. Slice the beef. If desired, skim the fat from the beef juices in the cooker. Serve the beef with its juices. Note: For slow cookers with heating elements in the side and bottom, not those with just a heated base, follow the manufacturer’s instructions for layering and temperature settings.
