Indulge in a comforting and creamy slow cooker loaded baked potato soup, sure to wow your guests or family!
Ingredients:
  • 8 large Idaho potatoes, skin-on, cut into 1-inch cubes
  • 1 (32 ounce) carton chicken broth
  • 1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed
  • 1 pint heavy whipping cream
  • 1 (16 ounce) container sour cream
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup chopped white onion
  • 1 cup chopped green onions
  • 1 (1 pound) package bacon
Instructions:
  • In a large pot, add potatoes and cover with salted water. Bring to a boil, then lower heat and simmer until tender, for about 10 minutes. Drain the potatoes.
  • In a slow cooker, blend together tender boiled potatoes, rich chicken broth, creamy processed cheese, indulgent heavy cream, tangy sour cream, velvety cream cheese, aromatic white onion, and fresh green onions.
  • In a large skillet, cook the bacon over medium-high heat, turning occasionally, until evenly browned for about 10 minutes. Drain the cooked bacon on paper towels, let it cool for about 5 minutes, then crumble it into the slow cooker.
  • Cook on High heat, stirring occasionally, until the potatoes completely break down, for around 2 hours. Reduce the heat to Low and continue cooking until the soup thickens, for about 1 hour and 30 minutes more.
