Indulge in a creamy Stilton cheese soup, showcasing the finest English blue-veined cheese aged to perfection.
Ingredients:
  • 1/4 cup butter or margarine
  • 1 medium onion, finely chopped (1/2 cup)
  • 1 medium carrot, finely chopped (1/2 cup)
  • 1 bay leaf
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon white pepper
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 1/2 cups half-and-half
  • 1 1/2 cups crumbled Stilton cheese (6 oz)
  • Chopped fresh parsley, if desired
Instructions:
  • In a 3-quart saucepan, gently melt the butter over medium heat. Sauté the onion, carrot, and bay leaf in the melted butter for about 5 minutes, stirring occasionally, until the onion and carrot are tender.
  • Combine the flour and white pepper into the mixture. Cook over low heat, stirring constantly until smooth and bubbly, then remove from heat. Slowly stir in the broth and half-and-half. Bring to a boil over medium heat while stirring constantly, and let it boil and stir for 1 minute.
  • Fold in the cheese, allowing it to slowly melt over low heat while stirring constantly. Discard the bay leaf and finish by sprinkling parsley over the soup.
