Creamy Tomato Slow-Cooker Chicken

Effortlessly prepare a savory chicken meal by simply combining ingredients in the morning for a flavorful dish that pairs perfectly with pasta, rice, or quinoa.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon pepper
  • 1 jar (15 oz) Alfredo sauce
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted petite diced tomatoes, drained
  • 1 can (8 oz) Muir Glen™ organic tomato sauce
  • 1 box (12 oz) uncooked pasta (such as penne or mostaccioli)
  • 2 tablespoons water
  • 1/2 cup shredded Italian cheese blend (2 oz), if desired
Instructions:
  • Prepare the slow cooker by lightly spraying it with cooking spray. Place the chicken at the bottom of the slow cooker and sprinkle garlic, basil, oregano, and pepper on top.
  • Combine Alfredo sauce, tomatoes, and tomato sauce in a bowl until evenly mixed. Pour over chicken.
  • Cover and simmer on Low heat for 5 to 6 hours.
  • Just before serving, cook pasta according to package instructions. In a small bowl, combine cornstarch and water, then add it to the slow cooker. Increase heat to High and cook uncovered for an additional 5 to 10 minutes.
  • Top the cooked pasta and chicken with a generous sprinkle of cheese before serving.
