Easy and savory tomato-basil soup, perfect for a quick and satisfying lunch pairing with bread or grilled cheese.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup olive oil
  • 1.5 cups chopped onions
  • 3 pounds tomatoes - cored, peeled, and quartered
  • 0.5 cup chopped fresh basil leaves
  • salt to taste
  • ground black pepper to taste
  • 1 quart chicken broth
  • 1 cup heavy cream
  • 8 sprigs fresh basil for garnish
Instructions:
  • In a large pot over medium heat, melt the butter with olive oil until sizzling. Add onions and sauté until tender. Stir in tomatoes and fragrant basil. Season with salt and pepper. Pour in chicken broth, lower heat, and simmer for 15 minutes.
  • Blend the soup until smooth using a blender or hand blender. Return to the pot and bring to a boil. Stir in the heavy cream over low heat. Strain the soup before serving and garnish with a sprig of basil.
