Whip up a quick white sauce to coat tender tortellini and vibrant veggies for a delicious meal in just over 30 minutes!
Ingredients:
  • 2 tablespoons butter or margarine
  • 1/2 cup shredded carrots
  • 1 medium onion, chopped (1/2 cup)
  • 1 package (8 oz) sliced mushrooms (3 cups)
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 2 cups milk
  • 1 cup shredded Gouda cheese (4 oz)
  • 3/4 cup frozen sweet peas, thawed (from 12 oz bag)
  • 1 package (9 oz) refrigerated cheese-filled tortellini
  • 1/2 cup finely crushed buttery crackers
Instructions:
  • Preheat oven to 350°F and generously coat a 1 1/2-quart casserole dish with cooking spray.
  • In a 3-quart saucepan over medium heat, melt butter. Add carrots, onion, and mushrooms to the pan. Cook for about 5 minutes, stirring occasionally, until mushrooms are tender.
  • Combine flour and salt, then slowly pour in the milk while stirring continuously. Cook and stir until the mixture bubbles; then remove from heat. Gently fold in cheese, peas, and tortellini. Transfer the mixture into a casserole dish and top with crackers.
  • Bake without a cover for approximately 15 minutes, or until the edges start to bubble.
