Creamy Turnip With Paprika Soup

Shallots fried in butter add a crispy touch to this creamy, flavorful paprika and thyme seasoned soup.
Ingredients:
  • 2 tablespoons olive oil
  • 1.5 pounds peeled turnip bulbs, not the leafy tops, cut into 1-inch chunks
  • 1 large onion, cut into large dice
  • 1 tablespoon butter
  • 1 pinch sugar
  • 3 large garlic cloves, thickly sliced
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme leaves
  • 0.125 teaspoon cayenne pepper
  • 3 cups chicken broth, homemade or from a carton or can
  • 1.5 cups half-and-half (or whole milk)
  • Salt and freshly ground pepper, to taste
  • Garnish: shallot crisps*
Instructions:
  • Warm the oil in a spacious saute pan over medium-high heat until it shimmers.
  • Add the turnips followed by the onion. Saute gently at first, allowing the vegetables to caramelize slightly, then increase stirring until golden brown, about 7 to 8 minutes.
  • Lower the heat and stir in butter, sugar, and garlic. Cook until the vegetables are a deep caramel color, about 10 minutes.
  • Sprinkle in paprika, thyme, and cayenne pepper, then saute until aromatic, for about 30 seconds to 1 minute more.
  • Pour in the savory broth and let it gently simmer over medium-high heat. Lower the heat to low and simmer with the pot partially covered until the turnips are tender, approximately 10 minutes.
  • Blend the mixture until silky smooth for about 30 seconds to 1 minute using an immersion blender or traditional blender. If using a traditional blender, release steam by either taking out the center of the lid or lifting one edge and cover the lid with a kitchen towel. To utilize all the flavors, rinse the blender with a bit of half-and-half, blend shortly, and add the mixture to the soup.
  • Transfer the mixture back to the pan (or a soup pot) then pour in enough half-and-half to achieve a souplike consistency that is thick enough to float the garnish. Taste the soup and season with salt and pepper, as needed. Heat the soup thoroughly, spoon it into bowls, garnish, and enjoy your delicious creation.
