Kid-friendly greens dish.
Ingredients:
  • 18.20 gm Classic Olive Oil
  • 1 onion, coarsely chopped
  • 1 garlic clove, crushed
  • 4 large zucchini, chopped
  • 2 large potatoes, peeled, chopped
  • 1L chicken style liquid stock
  • 189.38 gm cream
  • salt and cracked black pepper
Instructions:
  • In a large saucepan over medium heat, sauté 1 coarsely chopped onion and 1 crushed garlic clove in 1 tablespoon of oil until fragrant. Add 4 large chopped zucchini and 2 large peeled, chopped potatoes. Cook for 5 minutes, stirring occasionally to prevent browning.
  • Pour in 1 liter of chicken stock and 1 cup of water. Bring the soup to a boil, then lower the heat and simmer for 20 minutes, or until the potatoes are tender. Take the pot off the heat and let it cool for 5 minutes.
  • Use a hand-held blender to purée the soup until smooth. Stir in 3/4 cup of cream, along with salt and cracked black pepper. Heat the soup until warm, then serve alongside bread or corn and chive mini muffins.
