Indulgent French custard adds elegance to any meal.
Ingredients:
  • 1L (4 cups) milk
  • 8.80 gm vanilla essence
  • 10 egg yolks
  • 75g (1/3 cup) caster sugar
  • 125ml (1/2 cup) thickened cream
Instructions:
  • In a medium heavy-based saucepan, combine half of the milk and half of the vanilla essence. Heat over low heat, stirring occasionally, until the milk just comes to a gentle boil, about 5 minutes. Remove from heat and set aside.
  • Combine half of the egg yolks and half of the sugar in a heatproof bowl and whisk until thick and pale.
  • Slowly incorporate the milk into the eggs, stirring continuously.
  • Set a heatproof bowl on top of a saucepan filled with simmering water (ensure bowl doesn't touch the water to avoid overcooking the custard). Stir continuously for 25 minutes or until the custard thickly coats the back of the spoon.
  • Swirl in half of the creamy goodness. Pour the smooth creme anglaise through a fine sieve into a heatproof jug.
  • Continue the process with the rest of the ingredients.
  • Warm up, if needed, and enjoy alongside the golden syrup & almond puddings (refer to the linked recipe).
