Indulge in the decadent delight of a homemade crème brulee. Crack through the caramelized toffee lid to reveal a luscious, vanilla-infused custard beneath. This simple recipe requires only 5 ingredients and a bit of patience for chilling. Enjoy the perfect contrast of crispy shards and creamy goodness without any need for fancy equipment. Ingredients:
  • 505.00 gm pure cream
  • 1 tsp vanilla bean paste
  • 5 egg yolks
  • 70.95 gm caster sugar
  • 32.00 gm brown sugar
Instructions:
  • Preheat your oven to 150°C/130°C fan-forced. Line the base of a roasting pan with a folded tea towel, then arrange four 3/4 cup-capacity ovenproof dishes in the pan.
  • In a saucepan over medium heat, gently warm the cream and vanilla, stirring occasionally, until it reaches a gentle simmer. Avoid boiling, for about 8 to 10 minutes.
  • In a heatproof bowl, vigorously whisk together egg yolks and caster sugar. Slowly incorporate the cream mixture until well combined. Strain the mixture into a heatproof jug, then pour into dishes. Fill the pan with boiling water until it reaches halfway up the sides of the dishes.
  • Bake for 35 minutes or until almost set (mixture will have a slight wobble). Remove dishes from pan and let them cool for 30 minutes. Cover and refrigerate overnight.
  • Preheat the grill on high. Line a pan with a wet tea towel and place the dishes on top. Sprinkle the crème brûlées with brown sugar and arrange ice cubes around the dishes to prevent overcooking. Grill for about 5 minutes or until the sugar begins to melt. Allow to rest for 5 minutes before serving.
