Irresistible creme brulee: a rich, creamy dessert with a crackling caramelized top.
Ingredients:
  • 625ml cream
  • 1 vanilla bean, split
  • 6 egg yolks
  • 100g caster sugar
  • 32.00 gm brown sugar
Instructions:
  • Preheat the oven to 150°C and arrange six 2/3-cup (160ml) capacity ovenproof dishes in a large roasting pan.
  • In a medium saucepan, pour in the cream. Scrape the vanilla bean seeds into the cream using a small, sharp knife, then add the whole bean to the mixture. Heat over medium until it simmers (avoid boiling).
  • Whisk egg yolks and caster sugar until well combined. Gradually whisk in cream. Remove vanilla pod. Divide mixture among dishes and place in roasting pan. Fill pan with boiling water halfway up the sides of the dishes.
  • Bake until just set in a preheated oven for 25-30 minutes. Remove and transfer dishes to a tray to cool for 30 minutes. Cover with plastic wrap and chill in the fridge for 4 hours before serving.
  • 1. Preheat the grill to high heat. 2. Evenly sprinkle the brulees with brown sugar and place them under the grill for 1-2 minutes, or until the sugar bubbles and caramelizes. Alternatively, you can use a brulee torch to caramelize the sugar. 3. Serve immediately.
