Vanilla baked custard with a heavenly caramelized topping.
Ingredients:
  • 300ml pouring cream
  • 250ml (1 cup) milk
  • 1 vanilla bean, split
  • 5 egg yolks
  • 70g (1/3 cup) caster sugar
Instructions:
  • Preheat the oven to 150C/130C fan forced. In a saucepan over medium heat, gently heat the cream, milk, and vanilla bean until almost boiling.
  • Retrieve the fragrant vanilla bean, gently extract the seeds into the luscious cream mixture, and bid farewell to the bean.
  • Whisk together the egg yolks and caster sugar in a heatproof bowl until smooth and well mixed.
  • Combine the creamy mixture with the egg mixture, then strain into a jug before evenly pouring into four 185ml ovenproof ramekins.
  • Place the ramekins in a roasting pan and carefully pour boiling water around them until it reaches halfway up the sides. Bake for about 35 minutes or until the custard is just set.
  • Allow to cool slightly, cover, and refrigerate for 4 hours until set. Sprinkle custards with raw sugar and caramelize using a kitchen blowtorch.
