Elevate chicken with zesty creole seasoning: paprika, cumin, allspice, garlic, and lime for gourmet flair.
Ingredients:
  • 4 chicken marylands
  • 10.00 gm smoked paprika
  • 5.00 gm ground cumin
  • 1 tsp ground allspice
  • 1 tsp garlic powder
  • Zest and juice of 3 limes
  • 36.40 gm extra virgin olive oil
  • Sea salt flakes and freshly ground black pepper
  • 60ml (1/4 cup) vegetable oil
  • 2 tsp sesame oil
  • 2 French shallots, very finely chopped
  • 6 garlic cloves, crushed
  • 2000.00 ml baby spinach leaves
  • 1/4 tsp cayenne pepper
Instructions:
  • Preheat the oven to 210C/190C fan-forced and line a baking tray with baking paper. Pat the chicken dry with paper towel, then score in parallel lines using a sharp knife.
  • In a bowl, combine paprika, cumin, allspice, garlic powder, lime zest, lime juice, and oil. Season the mixture generously with salt and pepper. Rub it onto the chicken, then refrigerate for at least 30 minutes or overnight for optimal flavor.
  • Arrange the chicken on the baking tray and bake until lightly blackened and firm to the touch, about 25 minutes.
  • In a large frying pan, combine the vegetable and sesame oils. Heat over high heat. Add the shallot and garlic, cooking for 2 minutes until fragrant and starting to brown.
  • Cook the spinach until it wilts, then sprinkle with cayenne pepper and season with salt and pepper. Drain the spinach mixture in a colander briefly before serving.
