Crepes with Chinese chicken

Satisfy your cravings with versatile crepes, elevated with a Chinese-inspired flair using simple ingredients.
Ingredients:
  • 250.00 ml plain flour
  • 515.00 gm milk
  • 20.00 ml finely chopped fresh chives
  • 67.50 gm hoisin sauce
  • 2 tsp rice vinegar
  • 1 barbecued chicken, shredded (see note)
  • 3 green onions, cut into 5cm lengths
  • 1 Lebanese cucumber, thinly sliced
Instructions:
  • Sift flour into a bowl. In a jug, whisk together milk and eggs until smooth. Pour the milk mixture into the flour, add chives, and whisk until fully combined.
  • 1. Coat a medium non-stick frying pan with oil spray and heat over medium heat. 2. Pour 2 1/2 tablespoons of batter into the pan and swirl to cover the base. 3. Cook for 2 to 3 minutes until light golden, then flip and cook for 1 minute. 4. Transfer to a plate, cover to keep warm, and repeat with the remaining batter.
  • Mix the hoisin sauce and vinegar in a bowl. Spread a teaspoon of the sauce mixture on a crepe. Add chicken, onion, and cucumber on top. Roll it up to seal the filling, then cut in half. Repeat the process with the rest of the crepes, sauce mixture, chicken, onion, and cucumber. Serve and enjoy!
