Elevate your evening with a vibrant salad of fresh beans and peas.
Ingredients:
  • 14.40 gm honey
  • 200g green beans, topped
  • 200g butter beans, topped
  • 1 bunch (about 150g) snake beans, topped, cut into l0cm lengths
  • 150g snow peas, topped
  • 150g sugar snap peas, topped
  • 80mls (1/3 cup) extra virgin olive oil
  • 5 tsp balsamic vinegar
  • 5.90 gm Dijon mustard
  • Salt & ground black pepper, to taste
Instructions:
  • Create the dressing by combining extra virgin olive oil, balsamic vinegar, mustard, and honey in a screw-top jar. Shake vigorously and season with salt and pepper to taste.
  • 1. Start by bringing a pot of water to a gentle boil. Add green beans, butter beans, and snake beans, and blanch them for 1-2 minutes. Use a slotted spoon to transfer the beans to a colander and rinse them under cold water. 2. Next, add snow peas and sugar snap peas to the same pot and boil for just 30 seconds. Drain and rinse them under cold water. 3. Combine all the blanched vegetables and dressing together. Store the mixture in an airtight container in the refrigerator.
