Crispy fish fingers coated in fresh bread crumbs, perfectly fried in minutes for a deliciously flaky texture.
Ingredients:
  • 10 ounces sole fillets
  • 2 large eggs
  • 2 cups fresh fine bread crumbs
  • 0.75 cup all-purpose flour
  • salt and ground black pepper to taste
  • 1 cup oil for frying, or as needed
  • 1 medium lemon, cut into wedges
  • 2 tablespoons tartar sauce
Instructions:
  • Slice the fish fillets into elegant diagonal strips, each 3/4 inch wide.
  • Crack eggs into a shallow dish and vigorously beat them with a fork. Spread bread crumbs in a separate dish. Combine flour, salt, and pepper in a large zip-top bag.
  • Coat fish strips thoroughly in an egg wash. Dredge in seasoned flour, ensuring an even coating. Repeat the process by dipping in egg, followed by breadcrumbs. Place the coated strips on a tray in a single layer and allow them to set for at least 5 minutes before cooking.
  • Heat 1/2 inch of oil in a large frying pan over medium-high heat to 350°F (175°C). Fry fish strips in batches for 2 to 2 1/2 minutes, turning once. Drain on paper towels, then repeat with remaining strips, taking care not to overcrowd the pan.
  • Garnish with lemon wedges and tangy tartar sauce.
