Delicious salmon katsu bites with crispy coating, tender fish, and umami flavors. Perfect finger food for kids or on-the-go snack. Served with a flavorful Japanese-inspired salad. Culinary adventure awaits!
Ingredients:
  • 500g skinless salmon fillets, cut into 2cm pieces
  • 2 eggs, lightly whisked
  • 50g (1/3 cup) plain flour
  • 100g (2 cups) panko breadcrumbs
  • Vegetable oil, to shallow fry
  • Finely shredded green cabbage, to serve
  • Tonkatsu sauce, to serve
  • Pickled ginger, to serve
  • Thinly sliced green shallot, to serve
Instructions:
  • Season the salmon for a burst of flavor.
  • In a bowl, crack the egg. In two separate bowls, place the flour and breadcrumbs. Coat the salmon in flour, shaking off excess. Dip in egg, then breadcrumbs, pressing firmly to coat.
  • Fill a medium non-stick frying pan with enough oil to come 3cm up the side of the pan. Cook salmon in batches, turning occasionally, until golden and cooked through, about 3 minutes. Drain on a plate lined with paper towel.
  • Top the dish with fresh cabbage, drizzle it with tonkatsu sauce and add some ginger, then finish by sprinkling shallots on top before serving.
