Award-winning no-bake peanut butter cookies - quick stove-top prep for a delicious treat!
Ingredients:
  • 1 1/2 cups light corn syrup
  • 1 cup creamy peanut butter
  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
  • 7 cups crisp rice cereal
  • 1 cup salted peanuts
Instructions:
  • Prepare 2 large cookie sheets by lining them with waxed paper or foil.
  • In a 5-quart heavy Dutch oven, bring corn syrup to a boil over medium heat, stirring occasionally. Add peanut butter and blend until smooth. Mix in cookie mix until fully combined. Cook for 2 minutes, stirring continuously until the candy thermometer reaches 160°F.
  • Remove the mixture from heat and carefully combine the cereal and peanuts until evenly coated using a wooden spoon or rubber spatula.
  • Spoon rounded tablespoons of dough onto baking sheets. Gently press down on each cookie with your fingertips to slightly flatten. Allow to cool completely for about 30 minutes. Store in a covered container at room temperature.
