Total Time:
Versatile cookies: Skip eggs for crisp texture, chewy otherwise.
Ingredients:
  • 1 cup packed brown sugar
  • 1 cup shortening
  • 1 teaspoon baking soda
  • 2 tablespoons hot water
  • 2.5 cups all-purpose flour
Instructions:
  • Combine the sugars, peanut butter, and shortening in a bowl. Dissolve baking soda in hot water, then pour it into the mixture. Mix thoroughly until well combined.
  • Incorporate the eggs into the mixture, then gently mix in the flour and shape the dough into balls.
  • Arrange the balls on a parchment-lined baking sheet. Use a fork moistened with water to create a classic criss-cross pattern on top. Bake in a preheated oven at 350 - 375 degrees F (175 - 190 degrees C) for 8-10 minutes until golden brown.
