Chewy peanut butter cookies with a hint of vanilla and chunks of chocolate, made with chickpea flour and oats.
Ingredients:
  • 0.75 cup butter, softened
  • 1 cup packed brown sugar
  • 1 egg
  • 0.33333334326744 cup peanut butter
  • 1 teaspoon vanilla extract, or more to taste
  • 2 cups chickpea flour
  • 2 tablespoons cornstarch
  • 1.5 cups chopped chocolate
  • 0.5 cup rolled oats
  • 0.25 cup chopped mixed nuts, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease 2 baking sheets.
  • Combine butter, brown sugar, egg, peanut butter, and vanilla extract in a bowl and mix until smooth. In a separate bowl, combine chickpea flour, cornstarch, baking powder, and salt. Add the dry mixture to the butter mixture and mix well to create cookie dough. Gently fold in chocolate, oats, and nuts.
  • Refrigerate dough for a minimum of 15 minutes.
  • Scoop heaping tablespoonfuls of cookie dough and place on the lined baking sheets.
  • Bake in a hot oven until golden brown, for 10 to 13 minutes. Allow cookies to cool on a baking rack for 2 to 3 minutes, then transfer to a wire rack to cool completely.
